2 quarts water 

Juice from 1 lemon

2 Lemons (sliced thinly)

Ice

Method:


• Combine all ingredients and place in fridge for a bit to infuse flavor.

1 yellow onion

5 cloves garlic

1 bunch basil

1 bunch parsley


Instructions:


• Steam green beans, celery, and zucchini until very soft, about 15 minutes. 

• Add onion, spinach, and garlic. Cook for 5 minutes.

• (Optional) Drain excess water soup for a thicker result.

• Add parsley and basil and puree until smooth.

• Season with salt and pepper.

Ingredients: 


3 medium zucchinis 

2 cups of spinach

4 to 5 cloves of roasted garlic

1 cup of raw unsalted almonds

1/2 fresh lemon

2 to 3 tablespoons of organic virgin olive oil (more for a creamier consistency)

Pinch of sea salt


Instructions:


• Wash and then slice the ends off of each zucchini 

• Slice zucchini in half and then place on spiralizer to make “noodles”

• To make pesto, add spinach, olive oil, almonds, garlic, lemon juice and sea salt into a food processor and pulse together until evenly combined

• Dollop pesto on zucchini noodles and enjoy.

200g Tenderstem broccoli 

200g salmon or trout fillets (skinned)

1 tbsp olive oil

½ chili pepper (deseeded and finely chopped)

2 spring onions (sliced)

25g chopped nuts (brazil or almonds)

1 tbsp mixed seeds (linseeds, pumpkin, sunflower, or sesame)

1 orange


Instructions:


• Take a tiered steamer and add a little water to boil. 

• Add broccoli to the water.

• Place steamer on top and lay the salmon inside.

• Cook for 3 minutes until broccoli is tender and the salmon firm

• Remove from heat and let the salmon cool. Drain the broccoli.

• Heat the oil in frying pan and fry the chili, spring onions, nuts, and seeds for about 4 minutes until golden.

• Pare the zest of half orange into strips. Add to the pan with a squeeze of orange juice.

• Season with salt and ground pepper.

• Flake the salmon into pieces, mix with the broccoli, and sprinkle the chili and nut mixture on top.
