That’s why this recipe is the perfect Thanksgiving appetizer, because it prevents you from eating much when the entrée and desserts are served. We know it breaks the culinary law, but it benefits your diet plan – the ultimate goal.


Ingredients:


1/2 tsp. black pepper (ground)

8 medium-sized yellow potatoes

2 tbsp. olive oil

1 tsp. salt

2 ripe avocados

1/2 cup quartered grape tomatoes

1/2 cup sour cream

1/4 cup green onions (sliced)

1/4 cup cilantro (chopped)

To Make Guacamole:


Cut the avocado in half to remove the pit.

Cut the avocado into chunks right inside the peel.

Use a spoon to scoop them out and then mash.

Add salt.


Method:


• Preheat oven to 400 degrees.

• Wash potatoes to remove dirt from skins then cut in half.

• Remove center flesh from potatoes.

• Place potato halves on a sheet pan.

• Sprinkle with olive oil and rub over the potato flesh and skin. Sprinkle with salt and pepper.

• Bake, flesh-side down, until potatoes are soft. Pierce with a fork to know.

• Let potatoes cool for a few minutes.

• Fill each skin with guacamole.

• Top with tomatoes, sour cream, green onions, and cilantro.


2. Herb Roasted Turkey (Main Course)

Method:


• Preheat oven to 350 degrees.

• Mix melted butter with lemon juice and herbs. Set aside.

• With the breast side up, place turkey on flat rack in shallow roasting pan.

• Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper.

• Roast for 2 and a half to 3 hours, or until internal temperature reaches 165 degrees.

• Remove from oven and set aside for 20 minutes.
